I almost always have feta on hand, using it in recipes like my feta cheese dip and tortilla pockets. However, these watermelon feta bites are my absolute favorite way to put the salty cheese to use.

The bites are shaped like little strawberries, but made with crisp, sweet watermelon and everyone’s favorite creamy cheese. They make a charming snack kids adore, and are equally suited to serve at summer dinner parties. I hope you’ll love them as much as we do!

Watermelon: Look for a dark green watermelon with a field spot. It should feel heavy for its size and sound hollow when tapped.

• Feta: Use block feta instead of crumbles. I use plain feta, but flavored options are a fun way to switch up the taste.

• Kiwi: I use regular kiwi to make the strawberry ‘leaves’, but you can use cucumber or Galia melon, too.

• Sesame seeds: Adds a slight nutty taste and crunch.

How to Make Watermelon Feta Bites

1. Prepare the ingredients. Slice the watermelon and feta into slabs of equal thickness, and cut out pieces with the heart-shaped cookie cutter. Then, shape the kiwi leaves using a small star cutter.

2. Layer. Top the feta hearts with watermelon. Place the kiwi star on top of the watermelon, and finish with a sprinkle of sesame seeds to resemble strawberry seeds. Enjoy!

Possible Variations

• Herbs: Top the bites with fresh mint leaves or basil for a bright, refreshing pop of flavor.

• Topping: Add a drizzle of balsamic glaze, regular honey, or hot honey for an extra depth of flavor.

• Shape: Use different cookie cutters to make fun shapes like flowers, stars, squares, or circles.

• Watermelon: Try cantaloupe, honeydew, or kiwi instead.

• Feta: Swap the feta with paneer or goat cheese for a slightly different taste.

FAQs

Can I make watermelon feta bites ahead of time?

You can assemble these bites a few hours in advance. Any longer than that, and they tend to become soggy. Arrange the bites in a single layer in an airtight container, and store them in the fridge, leaving off the sesame seeds until just before serving.

What’s the best way to serve these bites?

You can enjoy these feta watermelon bites as a quick appetizer or snack. Or, add them to snack platters alongside options like ham and cheese pinwheels, melon ball skewers, and homemade cheese crackers.
