This refreshing summer salad combines sweet watermelon, salty feta cheese, juicy pomegranate, and crisp cucumber with a caramelized pumpkin seed granola.
The addition of toasted granola offers a tasty crunch that pairs well with the salad's sweet and salty elements.
Top everything with a honey, lemon, olive oil, and chopped fresh basil (or mint) dressing, and enjoy this delicious watermelon feta salad all summer.

Ingredients
- 4 slices of watermelon
- half a cucumber
- 100 grams feta (3.5 oz)
- half pomegranate (seeds)
- 8 tablespoons olive oil
- half a lemon (juice)
- 2 tablespoons honey
- 1 tsp sea salt
- 1/2 tsp pepper
- fresh basil (or mint) leaves
- 1 dl pumpkin seeds (1/2 cup)
- 80 ml water (1/3 cup)
- 1 tablespoon cane sugar
- parchment paper
Instructions
1. To make the pumpkin seed granola, heat a small pan on medium-high.
2. Add the sugar, water, and seeds to the pan and mix with a wooden spoon.
3. After a few minutes, the water will boil and then evaporate.
4. Stir to caramelize the seeds.
5. Once the seeds are golden, pour them out onto parchment paper.
6. Use the wooden spoon to separate the seeds.
7. Sprinkle with sea salt and pepper.
8. Allow to cool.
9. Cube the watermelon.
10. Chop the cucumber.
11. Crumble the feta.
12. Start assembling the salad: Add watermelon cubes, cucumber, crumbled feta cheese, pomegranate seeds, and finally the pumpkin seed granola.
13. Mix together the dressing ingredients: olive oil, honey, finely chopped fresh basil (or mint) leaves, lemon juice, sea salt, and pepper.
14. Pour the dressing over the salad.
15. Serve.
