  • Tortilla: I use the regular 10-inch size plain flour tortillas.
  • Feta: A block of feta will give the best result.
  • Mozzarella: Shred your own or buy pre-shredded.
  • Spices and herbs: Za’atar adds a citrusy flavor, and a sprinkle of fresh, chopped parsley keeps it bright.

How to Make Tortilla Pockets

  1. Prepare the ingredients: Halve the tortillas and mix the two cheeses with za’atar. Spoon the filling onto the tortillas.
  2. Assemble the pockets: Fold the filling into a triangle shape.
  3. Fry the pockets until golden brown on both sides.
  4. Garnish with chopped parsley and serve.

Possible Variations

  • Tortilla: Use gluten-free, corn, or wholemeal varieties.
  • Filling: You can stuff the pockets with anything you like. Try ham, pepperoni, egg, bacon, chicken fajitas, shrimp, pesto, chicken, ham, tuna, spinach, cheese, smoked salmon, etc.

Yes! Use any pan you have, whether it’s stainless steel or ceramic, etc. You can even bake them in the oven at 180ºC (356ºF). First, brush them with olive oil, then bake until golden.

Why is my tortilla breaking off?

Make sure to use fresh tortillas so they are pliable.

How much filling is enough?

Aim for the exact amount you need to still close them without the tortillas breaking.

Equipment

Ingredients 

  • 6 tortilla, plain
  • 150 grams feta
  • 50 grams mozzarella, grated
  • 1/2 teaspoon za'atar
  • 1/2 teaspoon parsley, fresh

Instructions 

  • Mix the feta cheese, the grated mozzarella, and the za’atar in a bowl.
  • Slice the tortilla in half.
  • Fill the cheese mixture onto the base of the halved tortilla.
  • Fold into triangles.
  • Tuck in the sides to seal shut.
  • Fry on a grill pan on medium heat (I used a bit of butter in the pan) until golden brown on both sides and the cheese is melted.
  • Top with chopped parsley.
  • Serve.
