This easy Cheesy Chicken Dip is a delicious, throw-everything-together in one dish and bake-it kind of appetizer everyone will love. It's perfect for a party or gathering!
Use leftover roast or rotisserie chicken (or cook two chicken breasts) and mix with cream cheese, sour cream, cheddar cheese, chives, and sriracha.
Bake until golden and bubbly, then serve it with cucumber, carrots, crackers, tortilla chips, or crispy crostini slices.
This recipe also makes a tasty and filling lunch or dinner with a crunchy green salad, sourdough bread, and your favorite veggies.

Ingredients
- 225 grams cooked chicken (shredded)
- 200 grams sour cream (or creme fraiche)
- 1 teaspoon onion powder
- 200 grams cream cheese (plain)
- 1 tablespoon sriracha
- 180 grams red cheddar (grated)
- 1 tablespoon fresh chives (chopped finely)
- 1 tablespoon sea salt
- pinch of pepper
- 1 tablespoon green onion (chopped)
Instructions
Serves 4.
1. Preheat the oven to 205°C (400°F).
2. Mix all the ingredients apart from the cheddar and green onion. Add the salt bit by bit (you may need less or more depending on if your chicken is pre-salted).
3. Add half of the grated cheese to the chicken dip. Mix again.
4. Spoon the dip into a baking tray.
5. Top with the remaining cheese.
6. Bake for around 20 minutes until the top is bubbly and golden.
7. Sprinkle with chopped green onion.
8. Serve.
