These Cucumber Salmon Rolls are perfect for a refreshing, healthy lunch. They also make an elegant appetizer and snack.

You only smoked salmon, avocado, chives, and cream cheese. Top the mixture onto cucumber strips smeared with cream cheese. Roll everything together and cut into slices.

These rolls are so easy to make, and the recipe can be varied in so many ways. Feel free to add red onion, arugula, green onion, red peppers, more cucumber, dill, or even sushi rice. You can even swap the salmon for tuna and make my Cucumber Tuna Rolls.
If the chive bow is too complicated (and it took me a few tries to get right without breaking), simply top the rolls with sriracha mayo, black and white sesame seeds, or edible flowers instead.

Cucumber Salmon Rolls

- cling film
Ingredients
- 100 grams smoked salmon
- 1 avocado
- 1 tablespoon fresh chives
- 4 tablespoons cream cheese
- 1 cucumber
- 1/2 lemon
- sea salt, to taste
- pepper, to taste
- fresh chives, to garnish
Instructions
- Place the smoked salmon, avocado, 1 tablespoon fresh chopped chives, and half of the cream cheese on a chopping board.
- Chop everything together (you decide how finely you want the mixture).
- Slice thin strips of cucumber on a mandolin.
- Dry off both sides of the strips on a paper towel.
- Arrange the strips on top of a piece of cling film. You want the strips to overlap.
- Top the cucumber strips with the remaining cream cheese.
- Spoon the salmon cream cheese mixture on the bottom half of the strips. Keep the first inch free.
- Squeeze the juice from half a lemon on top.
- Sprinkle with sea salt and pepper.
- Use the cling film to roll up the salmon and cucumber strips tightly.
- Remove the cling film and slice the roll-ups.
- Arrange them on a platter and top with chive bows or chopped chives.
- Serve.
