These Cucumber Salmon Rolls are the perfect healthy lunch. Using cucumber strips instead of tortilla, they are naturally gluten-free, yet still filling and refreshing.

The rolls double as an elegant appetizer and snack, packed with rich smoked salmon, creamy avocado, and crunchy cucumber.

- Smoked salmon: Use pre-sliced salmon.
- Avocado: Choose a ripe avocado with a firm, but slight give.
- Chives: Adds a fresh, onion flavor to the filling and to garnish on top.
- Cream cheese: I like plain and full-fat, but use what you prefer.
- Cucumber: English cucumbers are best for this recipe. I donโt peel them first.
- Lemon: To brighten the filling.
- Seasoning: Add sea salt and pepper to taste.
How to Make Salmon Cucumber Rolls

- Prepare the smoked salmon filling: Chop smoked salmon, avocado, half the cream cheese, and chives on a cutting board.

- Slice the cucumber finely and line them onto plastic wrap so they overlap. Dry the slices with a paper towel and top with the remaining cream cheese.

- Spread the smoked salmon filling onto the bottom half of the cucumber strips.

- Roll tightly. Remove the plastic film, and slice.
Tips for Success
- Chop the smoked salmon filling as finely or rustic as you like.
- Use a mandolin for precise cucumber strips.
- Pat both sides of the cucumber layer dry with a paper towel, to reduce moisture.
- When you slice the roll, be sure to wash the knife in between.
Possible Variations
- Smoked salmon: Hot smoked salmon, tuna, shredded chicken, mortadella, salami, ham, bacon, sushi grade raw salmon, cooked shrimp, or crab.
- Avocado: Corn, carrot, red peppers, rice, guacamole, or mango.
- Cream cheese: Swap for a herby cream cheese, ricotta, mayo, sour cream, or goat cheese.
- Chives: Basil, mint, dill, lemon balm, or parsley.
- Cucumber: Peel the cucumber if you like, or try nori seaweed, lettuce, smoked salmon, or plain white tortillas.
- Lemon: Lime juice.
- Add-ins: Garlic, red onion, arugula, green onion, cooked rice, cucumber, or even sushi rice.

Cucumber Salmon Rolls
Equipment

Ingredientsย
- 100 grams smoked salmon
- 1 avocado
- 1 tablespoon fresh chives
- 4 tablespoons cream cheese
- 1 cucumber
- 1/2 lemon
- sea salt, to taste
- pepper, to taste
To garnish
- fresh chives
Instructionsย
- Place the smoked salmon, avocado, 1 tablespoon fresh chopped chives, and half of the cream cheese on a chopping board.
- Chop everything together (you decide how finely you want the mixture).
- Slice thin strips of cucumber on a mandolin. I used 10 slices.
- Dry off both sides of the strips on a paper towel.
- Arrange the strips on top of a piece of plastic wrap. You want the strips to overlap.
- Top the cucumber strips with the remaining cream cheese.
- Spoon the salmon cream cheese mixture on the bottom half of the strips. Keep the first inch free.
- Squeeze the juice from half a lemon on top.
- Sprinkle with sea salt and pepper.
- Use the plastic wrap to roll up the salmon and cucumber strips tightly.
- Remove the cling film and slice the roll-ups.
- Arrange them on a platter and top with chive bows or chopped chives.
- Serve.
