- Phyllo pastry:ย I prefer using store-bought phyllo in rectangular sheets. Allow them to come to room temperature for the best results.
- Butter:ย I use salted butter for extra flavor, but you can use unsalted butter or even substitute it with olive oil.
- Brie:ย Youโll need a round Brie (200 grams) for this recipe. If you are serving over six people, you can use a larger-sized Brie.
- Fig jam:ย I love using green fig jam, but any fig preserves will do.
- Fresh thyme:ย Thyme adds an earthy flavor that pairs well with the creamy cheese. You can swap for dried thyme or rosemary.
How to Make Phyllo Baked Brie

- Preheat the oven to 180ยฐC / 356ยฐF. Fold one sheet of phyllo pastry sheet in half lengthwise. Spread melted butter evenly over the phyllo and place the Brie in the center.

- Wrap the cheese in the pastry as you would a gift.

- Spread the fig jam onto the wrapped cheese and sprinkle with fresh thyme.

- Wrap the cheese in another sheet of phyllo.

- Shape the ribbons and the bow with phyllo pastry and place on the cheese. Brush with melted butter all over. Donโt forget the front, back, and sides.

- Bake for 22-25 minutes until golden.
Tips for Success
- Spread melted butter on each layer of phyllo pastry to ensure the finished result is as crispy as possible.ย
- Keep the remaining phyllo pastry covered under a clean, damp kitchen towel while you are working.
- Add lots of jam so thereโs enough in every bite.
- Ensure the entire cheese is completely covered with phyllo.
Possible Variations
- Skip the gift wrap:ย If youโre short on time, wrap the Brie in phyllo without the extra details, brush all the layers with melted butter, and bake.
- Swap the cheese:ย Try goat cheese, camembert, or feta.
- Replace the phyllo:ย Use puff pastry for a light, buttery texture.
- Try another preserve:ย I like using strawberry or raspberry preserves, apricot jam, hot honey, or olive tapenade.
- Top with chopped nuts:ย Toasted walnuts or pecans add a wonderful crunch.
- Serve with fruit:ย Sliced apples, pears, halved apricots, or grapes are all tasty options.

Baked Brie in Phyllo
Ingredientsย
- 1 Brie, 200 grams
- 50 grams butter, melted
- 3 phyllo sheets
- 4 tablespoons fig jam, green
- 1 teaspoon thyme, fresh
Instructionsย
- Preheat the oven to 180ยฐC / 356ยฐF.
- Fold a sheet of phyllo pastry lengthwise.
- Brush the top half of phyllo with melted butter and spread the butter between the layers, too.
- Place the wheel of Brie in the middle of the folded phyllo sheet.
- Wrap the first sheet of phyllo dough around the cheese as you would a gift.
- Spoon the green fig jam on top of the cheese and sprinkle with fresh thyme.
- Wrap the cheese in one more layer of buttered phyllo folded in half.
- Now, fold the last sheet of phyllo twice and trim it into a 2-3 cm (1 inch) thick strip. Repeat to make the phyllo ribbons and the bow.
- To shape the center of the bow, fold the phyllo sheet into a smaller strip โ about 1.5 cm (1/2 inch) thick.
- Arrange the ribbons and the bow, using the center piece to secure the bow (fold the ends of the strips to the back).
- Brush with melted butter all over.
- Bake the phyllo-wrapped Brie on a baking sheet for 22-25 minutes until golden brown and crisp.
- Serve warm with crostini or baguette and extra jam.
