These Phyllo Feta Fries are everything you want in an appetizer – crunchy, salty, sweet, and super easy to make!
Brush each piece of phyllo with olive oil, wrap it around the feta slices, and then bake in the oven until golden and crispy.

Serve these tasty baked feta bites hot or cold with a hot honey dip you can make yourself in no time!
They are also delicious on top of a salad or as part of a tapas menu.

Recipe Tip
To ensure the phyllo doesn’t flake and dry, work with one piece of pastry at a time. Roll the other pieces back up and cover them with a clean damp tea towel until you are ready to use them.

Phyllo Feta Fries
Ingredients
- 150 grams feta
- 4 sheets phyllo pastry
- 2 tablespoons extra virgin olive oil, for brushing
- 2 teaspoons mint, dried
- 2 teaspoons sesame seeds, black or white
- 5 tablespoons honey
- 1 teaspoon chili flakes
- sea salt, to taste
Instructions
- Preheat your oven to 180°C (355°F).
- Dry the feta on a piece of kitchen roll.
- Cut the cheese in half, halve each half again and again until you have 16 equal-sized pieces.
- Trim the phyllo into sections as wide as the feta (I got five pieces for each sheet). You will need 16 pieces in total.
- Brush olive oil on each piece of phyllo (the side facing up).
- Place a slice of feta at the top of the piece of pastry and roll it tightly.
- Sprinkle with dried mint on the last ⅓ of the rolled up pastry.
- Brush the top of the rolled fry with olive oil and sprinkle with black sesame seeds.
- When you’ve rolled all the fries, place them on a lined baking tray.
- Bake until golden and crispy (about 12-15 minutes).
- Heat the honey and chili flakes in a small pot on medium heat until the chili has infused the honey (about 2-3 minutes).
- Add sea salt to taste (optional).
- Pour the hot honey mixture into a bowl.
- Arrange the fries on a chopping board or platter and serve with hot honey.
