Prep Time: 30 min.

Nothing says summer like ice cream cones, so I just had to make a healthier version of the summer classic. They are perfect for themed Summer parties, or you can even just make one to surprise your little ones.

Instructions

1. Cut mango slices approximately 5 mm. thick (0.2 inch).

2. Trim the cones by hand. Once you have made the first one, place it on top of the remaining mango pieces, so you can make all the other cones the same size.

3. If you want, you can score the cones using a small knife.

4. Use the round cutter to make the scoops.

5. Arrange the cones and top with candy eyes.

Notes

If you have leftover fruit, you can save all these odd-shaped bits in a freezer bag to use in your next smoothie, or you can chop them up and make a mini fruit salad.

The cookie cutter and candy eyes I use are linked in my Shop.
