- Cucumber: English cucumbers are the ideal size for roll ups.
- Cream cheese: I prefer plain and full-fat, but any will do.
- Feta: Use a block of feta for the best taste.
- Fresh basil: Choose similar sized leaves to make the flower garnish.
- Zaatar: To add a herby and lemony flavor.
How to Make Cucumber Roll Ups
- Cut the cucumber strips with a vegetable peeler or mandolin. Dry each slice with a paper towel.
- Top with cream cheese, crumbled feta, and zaatar.
- Arrange 4-5 basil leaves on top of the cucumber strips.
- Roll up the strips, secure them with a skewer, and fold over the basil leaves.




Possible Variations
- Cucumber: Swap for strips of tortilla, prosciutto, or courgette.
- Cream cheese: Use any cream cheese you prefer, or try goat cheese or hummus.
- Feta: Any cheese that crumbles such as goat cheese, blue cheese, or Parmesan.
- Zaatar: Italian seasoning, oregano, chili flakes, bagel seasoning, sesame seeds, or sumac.
- Fresh basil: Or mint.

The feta is quite salty, so I don’t, but you can add sea salt or pepper to taste.

Cucumber Roll Ups
Equipment
Ingredients
- 1 cucumber
- 7 tablespoons cream cheese
- 150 grams feta
- 1 teaspoon zaatar
- 35 fresh basil leaves
Instructions
- Use a wide vegetable peeler or mandolin to cut long strips of cucumber.
- Dry them off with a kitchen towel.
- Top with cream cheese, feta crumbles and a sprinkle of za’atar.
- Add four or five leaves of basil next to each other along the top edge of the cucumber.
- Roll up the strips and secure them with a stick.
- Fold over the basil leaves so the roll-ups resemble a flower.
