These donut quesadillas are a delicious and fun way to switch up a classic.
They are called donut quesadillas, because of the hole that forms in the middle, when they are heated in a pan.
They are great for lunchboxes and quick dinners. You can fill them with cheese, cold cuts, salad and veg.
Instructions
1. Place your tortilla flat on a surface.
2. Make eight symmetrical cuts from the outer diameter towards the center, leaving space in the middle.
3. Add your toppings. I added grated red cheddar and ham.
4. Fold the eight sections one by one in clockwise order across the middle. The last piece will be a tight fit, but it helps if you loosen the first one.
5. Make sure the sections are tightly shut.
6. Heat a pan on medium-high heat (I like to add a knob of butter).
7. Place the donut in the pan with the sections facing down first. Once this side has browned, turn it over carefully until browned on the other side.
8. Allow to cool slightly and enjoy as is or with guacamole, salsa, pico de gallo, sour cream, etc.
