Prep Time: 20 min.
Celebrate the run-up to Christmas with this joyful avocado tree pair. I made one with colored lights and the other just plain. Top them onto sourdough toast as a fun starter, or make them as a December after-school snack for your kids. You could even place the pepper lights next to the avocado and ask the kids to help decorate the tree.
Ingredients
- avocados
- red peppers
- orange peppers
- yellow peppers
- metal straw
- candy eyes
- toothpick
- small star-shaped cookie cutter
- curved sprinkle
Instructions
1. Halve the avocado.
2. Remove the pit.
3. Cut a small piece off the back of each avocado to ensure the avocados lie flat.
4. Shape the peel into a rectangle for the tree trunk.
5. Slice a piece of red, yellow and orange pepper.
6. Use the metal straw to make the round cut-outs for the lights (you can get them out of the straw by using a skewer).
7. Cut a star out of yellow pepper and use the end of a toothpick to insert it in place on top of the avocado halves.
8. Shape the remaining pepper pieces you have into square-shaped gifts.
9. Top with contrasting pepper ‘gift wrap’ and a bow, both of which you can cut by hand.
10. Arrange all the elements: the eyes, curved mouth, pepper lights, treetrunk and gifts.
