Halloween sushi is surprisingly easy to make, and when it's shaped like little eyeballs, you've got the perfect spooky meal!

These delicious sushi rolls with rice, tuna, cucumber, and sriracha sauce are ideal for your next Halloween party or family dinner.

You can even send them off in a lunchbox if your kids love scary food.

These rolls are suitable to make ahead - just top with mayo when ready to serve.

Makes about 18 rolls.

1. Wash the rice in a small pot until the water runs clear.

2. Top the drained rice with the water.

3. Cook the rice on medium heat until boiling, then reduce to low for 20 minutes. Keep the lid on.

4. After 20 minutes, turn off the heat.

5. Add the rice vinegar and fluff the rice with a fork.

6. Allow to cool.

7. Mix the tuna with three tablespoons of cooked rice, a heaped tablespoon of mayo, and a sprinkle of sea salt.

8. Place a nori sheet on a flat surface. Top the entire sheet with rice, leaving a bit free at the top and bottom (use a bowl of water for your fingers to limit sticking).

9. Arrange half of the tuna rice on the bottom section of the nori sheet.

10. Drizzle the tuna mixture with sriracha.

11. Peel, and top and tail the snack cucumbers.

12. Arrange the cucumbers in a row on top of the sriracha sauce.

13. Roll the sushi and wrap it together tightly.

14. Slice the sushi roll in half, and then cut the roll into equal pieces (I got 9).

15. Repeat with another nori sheet.

16. Top the cucumber 'eyes' with nori pupils (which you can cut out of a small piece of nori) and a dollop of mayo for the highlight in the eye.

17. Serve.
