Cute Easter appetizer ideas using everyday ingredients are always great for your rotation.
This easy recipe with crispy paprika rice cakes, creamy goat cheese, and salty olives comes together in about 15 minutes. You can even make them beforehand, cover them, and store them in the fridge until they are ready to go.
Feel free to replace the rice cakes with any round crackers you like (or you can use cucumber slices, too). I didn't add any condiment underneath, but a fig jam, onion chutney, or olive tapenade would be delish. You can also use a cream cheese spread or mozzarella instead of goat cheese.
Serve these adorable lamb appetizers at Easter lunches and parties.
Pair them with a refreshing drink and enjoy this excellent snack while the kids are busy with their much-anticipated egg hunt.
Ingredients
- mini rice cakes
- goat cheese log
- kalamata olives (pitted)
- cheddar slice
- chia seeds
- metal straw
Instructions
1. Slice the goat's cheese.
2. Spread either fig jam, onion chutney, or olive tapenade onto each mini rice cake.
3. Top with the goat cheese slices.
4. Halve a kalamata olive.
5. Place one half of the olive on the goat cheese to make the lamb's face.
6. Using the other half, cut a straight line at one of the rounded corners for the perfect half-circle ear shape. Repeat for the other ear.
7. Add the lamb's ears.
8. Cut out round eyes using cheddar and a metal straw.
9. Place the eyes onto the lamb.
10. Top with chia seeds for pupils.
11. Serve.
