- Butter: I use salted butter. Unsalted butter is fine, too.
- Milk: I prefer whole milk.
- Water: For a thinner batter.
- Plain flour: All-purpose flour. No need to sieve it first.

- Baking powder: For a little lift.
- Vanilla paste: For a sweet, vanilla taste.

How to Make Mini Pancakes
- Prepare the batter: Melt the butter and let it cool. Combine the remaining ingredients in a large bowl and whisk in the butter. Pour the batter into a piping tool.
- Pipe small dollops of batter onto a pan over medium-high heat. Once the mini pancakes are golden brown and start to bubble, use a toothpick to turn them over. Fry until golden. Repeat with the remaining batter.

Equipment
- medium pan
- medium bowl
- wooden toothpick
Ingredients
- 100 grams butter
- 300 grams milk
- 100 grams water
- 275 grams plain white flour
- 1 tablespoon maple syrup
- 1 egg
- 8 grams baking powder
- 1 teaspoon vanilla paste
- ½ teaspoon sea salt
Instructions
- Melt the butter in a small pot over low heat.
- Allow the butter to cool.
- Mix the remaining ingredients in a large bowl.
- Pour in the cooled butter and whisk until just combined.
- Heat a medium pan over medium-high heat.
- Add a knob of butter to the pan and wipe most of it away with a folded paper towel (careful not to burn yourself).
- Pour the pancake mixture into a piping bag or tool.
- Dollop 10-20 mini pancakes onto the pan (about 1 cm or 0.4 inch in diameter each).
- When bubbles start to form and the pancakes are golden brown, turn them over with a wooden toothpick or similar until browned on the other side.
- Repeat.
- Serve with milk and maple syrup.
