  • Butter: I use salted butter, but unsalted butter is fine, too.
  • Plain flour: All-purpose flour. No need to sieve.
  • Apples: Choose fresh apples that are firm and crisp such as Pink Lady, Braeburn, Fuji, Honeycrisp, or Granny Smith apples.
  • Cane sugar: To sweeten. We arenโ€™t going overboard here as weโ€™ve got the filling, too.
  • Vanilla paste: Or vanilla extract.
  • Baking powder: To give a slight rise.

How to Make a Cinnamon Apple Cake

  1. Whisk egg, sugar, and vanilla for two minutes until light and fluffy.

Cake

  • 2 eggs, medium
  • 100 grams cane sugar
  • 1 teaspoon vanilla paste, or extract
  • 120 grams apples, chopped
  • 100 grams butter, melted
  • 100 grams plain white flour
  • 1 teaspoon baking powder

Filling

  • 50 grams butter, soft
  • 50 grams dark brown sugar
  • 1 tablespoon cinnamon

Instructionsย 

  • Preheat the oven to 170ยฐC (338ยฐF) fan.
  • Mix the eggs, sugar, and vanilla paste in a large bowl.
  • Whisk for two minutes until light and fluffy.
  • Add half the melted butter and half the flour and stir.
  • Add the remaining butter and flour, as well as the baking powder.
  • Fold in the chopped apples.
  • Add the batter to a lined baking tin.
  • Mix the ingredients for the filling.
  • Spread out blobs of the filling on top of the entire cake. I like to use two teaspoons for this.
  • Bake for 43-45 minutes until golden and baked through.
  • Allow the cake to cool for 10 minutes in the tin.
