  • Egg: A medium or large egg.
  • Melted butter: I use salted, but unsalted butter is fine too.
  • Brown sugar: Light brown sugar.
  • Vanilla paste: Or vanilla extract.
  • Plain white flour: All-purpose. No need to sieve it.
  • Baking soda: To give a slight rise.
  • Chocolate chips: Or chop your own chocolate chunks from a bar.
  • Sea salt: To sprinkle on top after baking. Will balance the sweetness (not pictured).

  1. Prepare the cookie dough: Mix the wet ingredients (melted butter, vanilla paste, and the egg). Whisk in the brown sugar.
  2. Fold in the dry ingredients (the flour and baking soda), followed by the chocolate chips.
  3. Spoon the cookie dough into a small skillet. Chill for at least 1 hour.
  4. Preheat the oven to 180°C (356°F) and bake for 12-14 minutes, until the edges look golden.

  • Chill the dough in the fridge for at least 1 hour (up to 1 day). This allows the flavors to absorb and the butter to solidify.
  • Top the cookie with extra chocolate chips before baking.

  • 80 grams brown sugar
  • 180 grams plain white flour
