These irresistible Cookie Dough Bites are the perfect treat when you crave something sweet but don’t feel like baking.

They have a soft, gooey cookie dough center and are dipped in melted chocolate. Serve them any time, any where, and they’re sure to be a hit!

And there’s no need to worry about raw dough, because there’s no egg in this recipe, and we use heat-treated flour to make it safe to eat. So the only thing to worry about is if you’ve made enough!

  • Plain white flour: Heat-treat the flour for safe consumption. Bake it until it reaches a temperature of 71°C (160°F) and let it come to room temperature.
  • Melted cooled butter: Salted or unsalted, depending on what you have.
  • Sugars: You’ll need a combination of dark brown sugar and cane sugar.
  • Milk: I use whole milk, but any milk will do.
  • Vanilla paste: Or vanilla extract. Adds a sweet, aromatic flavor.
  • Chocolate chips: Or chopped dark chocolate.
  • Sea salt: Balances the sweetness. Sprinkle it on top of the bites, too.
  • Dark chocolate: To coat the cookie dough balls. Opt for a good-quality chocolate. I like to use 70% cocoa solids (not pictured).

  1. Heat-treat the flour: Bake it at 180°C (356°F) fan for 8-10 minutes.
  2. Make the cookie dough: Stir the cooled butter with the sugars for 1 minute. Add the milk, sea salt, vanilla, and flour. Mix until combined. Fold in the chocolate chips.
  3. Coat in dark chocolate: Melt the chocolate and pour it into a small bowl. Dip the balls into the chocolate, tap off the excess, and allow to set.

Tips for Success

  • Stick the cookie dough balls in the freezer while you melt the chocolate. This will make the chocolate set faster.
  • Make sure to bake the flour until it reaches an internal temperature of 71°C (165°F) to kill off any bacteria.
  • Use a skewer or fork to dip the bites into chocolate, and make sure to tap off any excess.
  • Work quickly when dipping the balls in the melted chocolate. If the chocolate hardens simply melt it again to make it easier to work with.

Serving Suggestion

Top the cookie dough bites onto icecream, chocolate bark, or dessert trays.

Possible Variations

  • Chocolate: Use milk chocolate or white chocolate chips as you prefer, or blend them.
  • Flour: Swap for glutenfree flour or almond meal.
  • Milk: Try heavy cream.
  • Add-ins: Add chopped nuts, peanut butter, butterscotch chips, mini marshmallows, chopped candy bars, sprinkles, or crushed biscuits.

How to Store Leftovers

Keep leftover bites in an airtight container and store them in the fridge. They will last 3-4 days.

Can I freeze the cookie dough balls?

Yes! They are delicious straight from the freezer.

My cookie dough is dry and crumbly. What do I do?

Add a tiny bit of milk at a time, until the texture is just right.

My dough is too wet. What do I do?

Place the dough in the refrigerator for half an hour to firm up, and see if that helps. If not, add a 1-2 teaspoons more flour (heat-treated).

Can I make the edible cookie dough vegan?

Sure, swap butter for vegan butter, milk for almond milk, oat milk, or use your preferred vegan milk and vegan chocolate chips.

Can I bake these into chocolate chip cookies?

No, the cookie dough isn’t suitable for baking.

Is raw cookie dough safe to eat?

Absolutely! This recipe has no raw eggs or raw flour (because we heat-treat it), so it is safe to eat.

What’s the best way to melt chocolate?

There are three main methods:
Microwave: Break the chocolate into smaller pieces, place it in a microwave-safe bowl, and microwave it for 30 seconds intervals until melted. Mix between each interval.
Double-boiler: Fill a small pot with 2-3 cm water (1 inch), and bring it to a boil. Break up the chocolate, place it in a heat-safe bowl directly in the pot. Stir with a small spoon until melted.
Pot: Melt the chocolate directly in a pot on low heat, stirring continuously until it has the right consistency.

Ingredients 

Cookie dough

  • 100 grams plain white flour, (all-purpose flour), heat-treated
  • 75 grams butter, melted
  • 40 grams dark brown sugar
  • 20 grams cane sugar
  • 15 ml milk
  • 40 grams mini chocolate chips
  • teaspoon sea salt

Chocolate dip

  • 150 grams dark chocolate
  • ½ teaspoon sea salt

Instructions 

Cookie dough

  • Preheat the oven to 180°C (356°F) fan.
  • Place your flour in an even layer on a lined sheet pan and bake for 8-10 minutes.
  • Gather the flour in a mound and measure the temperature. It just needs to be over 71°C (165°F).
  • Allow the flour to cool to room temperature.
  • Melt the butter and let it cool, too.
  • Whisk the cooled melted butter, dark brown sugar, and cane sugar for one minute in a medium bowl. I do this by hand but you can use a mixer.
  • Add milk, sea salt, vanilla, and flour until combined.
  • Fold in the chocolate chips.
  • Measure out the dough into 10 gram balls for a uniform size.
  • Place the balls in the freezer while you melt the dark chocolate.

Chocolate

  • Melt the dark chocolate and pour it into a small bowl.
  • Use a skewer or fork to dip the cookie balls into the melted chocolate.
  • Tap off the excess and place the bites on a sheet of parchment paper.
  • Sprinkle with sea salt and allow to set.
