  • Dark chocolate: I use a good-quality bar with 70% cocoa solids.
  • Powdered sugar: No need to sieve it first.
  • Peppermint extract: Make sure to use an edible variant.
  • Milk: I use whole milk, but any milk is fine.
  • Fresh mint: Use only the leaves and chop them finely.

How to Make Homemade After Eights

  1. Melt the dark chocolate and spoon it into the base of your mold. Allow the chocolate to set in the fridge.

I don’t, however, you can if you prefer. I just make sure to melt the chocolate on low heat so it doesn’t get too hot.

Can I freeze the homemade chocolate candy?

Yes! They are delicious straight out of the freezer, or let them thaw for 30 minutes at room temperature. They will last about three months in the freezer.

Are these after-dinner mints similar to Peppermint Patties?

Peppermint Patties have a thick peppermint fondant interior, whereas this filling is silky and light.

I don’t have a square base mold. What do I do?

You can line a square cake pan or tin to make a chocolate bark instead.

The mint filling seems too thick. What can I do?

Add a tiny bit of milk until the consistency is just right.

The filling is runny. How do I fix it?

Add a bit of powdered sugar until it thickens up slightly.

Ingredients 

  • 300 grams dark chocolate
  • 140 grams powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract, edible
  • 10 fresh mint leaves, finely chopped

Instructions 

  • Melt the dark chocolate.
  • Spoon a tablespoon of chocolate into the base of each mold.
  • Allow the chocolate to set in the fridge.
  • Mix the powdered sugar, mint extract, finely chopped mint, and milk in a small bowl.
  • Spoon the mint filling on top of the set chocolate (I use a small cookie scoop for this, but two teaspoons will work, too).
  • Top with more melted chocolate, making sure the mint layer is covered.
  • Allow to set for 1 hour.
  • Remove them carefully and serve.
