These homemade After Eight Chocolates are heavenly, combining rich dark chocolate with a cool peppermint filling. They are surprisingly easy to make and so good.

All you need is a few simple ingredients and a square chocolate mold (and if you don’t have one, that’s fine, too). The only hard part is waiting for the base layer of melted chocolate to set before topping it with the minty center and more chocolate.

They’re the perfect melt-in-your-mouth sweet treat any time of the day, despite the name. Share them with your friends and family, or wrap them up as a cute edible gift.

Homemade After Eights Ingredients
Please be sure to scroll down to the recipe card below for the complete details!
- Dark chocolate: I use a good-quality bar with 70% cocoa solids.
- Powdered sugar: No need to sieve it first.
- Peppermint extract: Make sure to use an edible variant.
- Milk: I use whole milk, but any milk is fine.
- Fresh mint: Use only the leaves and chop them finely.

How to Make Homemade After Eights
- Melt the dark chocolate and spoon it into the base of your mold. Allow the chocolate to set in the fridge.
- Prepare the mint filling: Mix the powdered sugar, mint extract, fresh mint, and milk.
- Spoon the mint filling onto the chocolate base.
- Top with more melted chocolate and let it set.

Tips for Success
- Make sure the base chocolate layer has set before topping with the mint filling.
- Chop the mint finely for a subtle mint taste.
- Ensure the chocolate has set before removing it from the mold.
Possible Variations
- Dark chocolate: Milk or white chocolate is fine, too. Or try a mint-flavored chocolate for even more minty flavor!
- Milk: Swap for any milk you like, even coconut milk or other plant-based milks.
- Extras: Sprinkle the base of the chocolate with a pinch of sea salt, add a fresh mint leaf, or crushed candy canes.
How to Store Leftovers
Keep leftovers in an airtight container in the fridge and enjoy them within 1 week.
FAQs
