These appetizers couldn’t be any cuter. You'll need to use longer San Marzano tomatoes, which will allow space for the bocconcini. Top with basil leaves and you have a delicious mouthful.
Ingredients
- 9 San Marzano tomatoes
- 14 bocconcini
- 18 fresh basil leaves
- 1 tablespoon balsamic glaze
- sprinkle of sea salt
Instructions
Makes 9.
1. Halve the tomatoes lengthwise.
2. Scoop out the fleshy insides.
3. Drizzle a bit of balsamic glaze into the tomato.
4. Halve the bocconcini and insert three halves into each of the scooped out tomatoes.
5. Top with basil leaves and sea salt.
6. Serve.
