Homemade Fruit Leather Ingredients

  • Strawberries: Look for fresh, firm, and sweet berries for the best flavor. You can use frozen strawberries too, but the leather will need longer in the oven.

How to Make Homemade Fruit Roll Ups

  1. Prepare the strawberries: Blend the berries in a mini food processor or blender until it’s pureed and smooth. Preheat the oven to 65°C (149°F) on the fan setting.
  2. Pour the fruit puree onto a silicone mat. Spread it out in an even, thin layer.
  3. Bake for 3-4 hours until just dry to the touch.
  4. Trim into strips with scrissors or a pizza cutter and roll them up.

Tips for Success

  • A silicone mat (I use Silpat) helps you get that perfect, straight leather without wrinkles.
  • The leather dries from the outside in, so keep the center slightly thinner than the outer edges.
  • The leather is done when the center looks dry, and peels off easily. The top will be matte and not shiny.
  • Don’t overbake the leather, or the color will darken, and the consistency will be tough and flaky. It will still be delicious, though.
  • Make sure the fruit leather is completely dry before storing.

Possible Variations

  • Strawberries: Swap for frozen berries if that’s what is available. Or try mango, apples, pears, bananas, cherries, raspberries, peaches, apricots, or blueberries.
  • Add-ins: Honey, maple syrup, lemon juice, orange juice, lime juice, vanilla paste, cloves, nutmeg, ginger, fresh mint or basil.
  • Silicone mat: Parchment paper is fine, too.
  • Presentation: Swap half the strawberries for the same amount of other fruit purees. Mix and match the fruit leather to make a fun design.

How to Store Leftovers

Keep leftovers in an airtight container in the refrigerator for up to a week.

FAQs

How do I know when the fruit leather is done?

The center will look set, and if you press it there won’t be any indentations. It will be pliable and still a bright red color.

I don’t have a silicone mat, can I still make the roll ups?

Absolutely. Parchment paper is fine to use, too.

Can I use frozen strawberries?

Yes, but since they are more watery, the leather will need a bit longer.

Can I freeze the roll ups?

Yes! Store them in an airtight container or bag for up to three months. Allow them to thaw at room temperature or enjoy them frozen.

I don’t have a fan setting on my oven. What temperature should I then set my oven to?

Set it to 85°C (185°F). Check the roll ups after three hours. If the center is still shiny, give it 30 minutes more at a time until the leather has set.

Printed parchment paper, but regular parchment is fine, too.

Ingredients 

  • 300 grams strawberries

Instructions 

  • Preheat the oven to 65°C / 149°F fan.
  • Wash and dry the strawberries, and remove the leaves.
  • Puree the berries in a small food processor or blender.
  • Pour the puree onto a baking sheet lined with a silicone mat.
  • Spread out the puree with a palette knife or similar until it's about 2-3 mm thick (1/8th inch).
  • Bake the leather for 3 hours and check to see if it's done.
  • If the center looks dry, it's done. If the center is still wet, give it 30 minutes more at a time until the center has set.
  • Cut the leather into strips and wrap it in printed or regular baking parchment.

      Hi there, so sorry to hear that. It sounds like it baked too long. Check the temperature and once the leather goes from shiny to matte and peels off easily without indentations it’s done. Mine needed 3 hours, yours might need less in your oven. Hope that helps. Sine
