The platter is a real showstopper and makes the perfect side dish for family dinners and spooky parties. And the best part is you can make it in advance.
Recipe Tip
Use a ghost cookie cutter to shape the ghosts or trim the bottom of the mozzarella slice in a zig-zag with a sharp knife.

Spooky Salad
Ingredients
- 4 vine tomatoes
- 1 cucumber
- 2 fresh mozzarella balls
- 3 tablespoons olive oil
- 1 tablespoon balsamic glaze
- sea salt, to taste
- pepper, to taste
Instructions
- Cut the tomato and arrange on a platter. Top with a sprinkle of salt and pepper.
- Slice the mozzarella and use the mini melon baller to cut out eyes and a mouth.
- Trim the wavy bottom of the ghosts. I used a cookie cutter, but you can also zig-zag this part with a knife.
- Slice the cucumber.
- Make a symmetrical indent for the jaw.
- Use the metal straw to shape the holes for the eyes.
- To shape the teeth, cut two small v-shapes in the jaw.
- Make a few turns with a toothpick or lolly stick to make the nose.
- Top the tomatoes with the mozzarella ghosts and cucumber skulls.
- Fill the ghosts’ scooped eyes and mouths with balsamic glaze.
- Drizzle the salad with olive oil and sprinkle with sea salt and pepper.
- Serve.
