Everyone will love this beautiful Melon and Feta Salad with sweet watermelon, cantaloupe, crunchy cucumber, feta cheese, serrano ham, and peppery arugula.

Top everything with a zingy lemon and honey dressing and it's the perfect summer salad recipe.

Serve this side at your next barbeque or dinner party, or stick the cubes onto little skewers for fun appetizers.

If you don't have a square cookie cutter, just cut everything by hand. 

For the presentation, place the cubes as I have done or scatter them randomly. However, you prefer.

Adding thinly sliced red onion or crushed pistachio for crunch would also be delicious.

Instructions

1. Slice the watermelon.

2. Use the square cookie cutter to make the watermelon cutouts.

3. Repeat with the cantaloupe and cucumber. Make sure they are about the same height as the watermelon.

4. Slice the feta into cubes using a sharp knife. Washing the knife between cuts can help prevent the feta from crumbling.

5. Fold the serrano ham slices over in thirds lengthwise.

6. Twirl and twist one end to the other so it resembles a rose.

7. Stick a basil leaf into the final piece of the rose.

8. Arrange the arugula on a platter.

9. Top with the melon, feta, cucumber cubes, and serrano roses.

10. Mix the ingredients for the dressing: honey, white balsamic glaze, olive oil, lemon juice, sea salt, and pepper.

11. Top the salad with the lemon and honey dressing.

12. Serve.
