A Bow Tie Burrata is a delicious and joyful starter or salad for New Year’s or other festive occasions. It pairs wonderfully with crispy sourdough crostini and your favorite glass of bubbly. You can make a small plate like I have done or add more of everything if you’re serving a big group. The avocado detail isn’t as complicated as it may look, but it helps to have a ripe one so the slices hold together.

What you need


1. Slice the cherry tomatoes.

2. Arrange them on a small plate or platter. You can arrange them randomly or color-schemed as I have done.

3. Halve an avocado, remove the pit and the peel.

4. Slice the avocado thinly.

5. Flatten the slices carefully and curve into a circular shape.

6. Lift the avocado and top onto the cherry tomatoes.

7. Season with olive oil, sea salt and pepper.

8. Place the burrata in the center.

9. Cut a bow tie shape out of red cabbage, black olives or seaweed.

10. Use a metal straw to shape the buttons.

11. Top the bow tie and buttons onto the burrata.

12. Sprinkle the cheese with sea salt.

13. Finish with a generous drizzle of balsamic glaze.

14. Serve.
