All you need is a heart-shaped cookie cutter, avocado, fresh mozzarella, tomato, and cream cheese. Top with flaky sea salt and balsamic glaze for the final touch.

  • Sourdough:  Toast the bread for extra crispiness, fry it in a pan with butter, or enjoy it fresh (like I did).
  • Cream cheese: Adds a creamy, neutral-tasting base and helps keep the toast from drying out.
  • Avocado: I prefer Hass avocados. Always go for dark avocados with no dents or soft spots, with a slight give.
  • Tomato: You’ll need the peel from firm, large tomatoes such as vine tomatoes or beefsteak. Chop up the leftovers and add to your next salad.
  • Mozzarella: Use fresh mozzarella balls. You don’t want the ones that are soft inside.
  • Basil: Use fresh basil to garnish for a peppery, sweet taste.

How to Make Avocado Cheese Toast

  1. Prepare the ingredients: Remove the peel and slice it finely. Flatten the slices and cut out the hearts with the heart cookie cutter.
  2. Cut out the cheese and tomato hearts.
  3. Assemble the toast: Slice the sourdough, top with cream cheese, and then the avocado, mozzarella, and tomato hearts.
  4. Garnish with basil and balsamic glaze.

Possible Variations

  • Avocado: Ditch the hearts and cream cheese and make guacamole (add chopped red onion, grated garlic, lime juice, and season).
  • Tomato: Grate the tomatoes with a clove of garlic, or use cherry tomato slices instead. Arugula or spinach is also an option.
  • Cream cheese: Try cottage cheese, pesto, or hummus.
  • Mozzarella: Use any hard type of cheese.
  • Basil: Swap for chopped chives, coriander, parsley, or dill.
  • Seasoning: Sea salt and pepper are a must, but you can add bagel seasoning, chili flakes, or honey, too.
  • Shapes: If you don’t have a heart cookie cutter, use a small glass or similar to shape into discs instead. Or ditch the shapes and assemble the toast very simply. Will still be delicious!

Ingredients 

  • 1 avocado
  • 1 fresh mozzarella ball
  • 2 tomatoes
  • 2 slices sourdough bread
  • 2 tablespoons cream cheese
  • 12 fresh basil leaves
  • sea salt, to taste
  • pepper, to taste
  • 1 tablespoon balsamic glaze

Instructions 

  • Halve an avocado and remove the peel.
  • Slice the avocado thinly lengthwise and flatten it carefully with your fingers.
  • Use the heart cookie cutter to make the avocado weave hearts and mozzarella hearts (it may help to lift the avocado hearts with a knife).
  • Cut pieces of tomato along the skin and use the cutter to trim the hearts into the soft side of the tomato.
  • Slice your bread and top with cream cheese.
  • Arrange the tomato, mozzarella and avocado hearts on top of the bread.
  • Drizzle with balsamic glaze, sea salt and fresh basil and serve.
