  • Mango: I like to peel the mango first, then slice along both sides of the pit.
  • Avocado: I like to use firm Hass avocados with a semi-soft tip for the best taste.
  • Red onion: For a subtle, peppery flavor.
  • Dressing: Olive oil, fresh lime juice, maple syrup, fresh mint, sea salt, and pepper.

  1. Prepare the ingredients: Dice the mango, avocado, cucumber, and red onion.

Ingredients 

  • 2 avocados
  • 1 mango
  • 1 cucumber, Persian
  • ½ red onion, small

Dressing

  • 3 tablespoons olive oil, extra virgin
  • 2 tablespoons maple syrup
  • 1 lime, juice
  • sea salt, to taste
  • pepper, to taste
  • 1 tablespoon fresh mint, chopped

Instructions 

  • Peel and dice the mango.
  • Cube the avocado and cucumber.
  • Finely chop the red onion.
  • Add the cubed mango, avocado, cucumber, and red onion to a large bowl.
  • Whisk together the dressing ingredients: olive oil, maple syrup, lime juice, and freshly chopped mint.
  • Season the dressing to taste with sea salt and black pepper.
  • Pour the dressing over the salad.
  • Garnish with fresh mint.
