- 2 avocados
- 1 mango
- 1 cucumber Persian
- ½ red onion small
Dressing
- 3 tablespoons olive oil extra virgin
- 2 tablespoons maple syrup
- 1 lime juice
- sea salt to taste
- pepper to taste
- 1 tablespoon fresh mint chopped
Peel and dice the mango.
Cube the avocado and cucumber.
Finely chop the red onion.
Add the cubed mango, avocado, cucumber, and red onion to a large bowl.
Whisk together the dressing ingredients: olive oil, maple syrup, lime juice, and freshly chopped mint.
Season the dressing to taste with sea salt and black pepper.
Pour the dressing over the salad.
Garnish with fresh mint.
