Most stuffed peppers have a herby cream cheese filling, but these are filled with creamy, garlicky whipped feta that complements the sweetness of the crunchy peppers.

A hand holds a snack resembling a bunny made from stuffed mini peppers, with mozzarella for ears and small sesame seeds for eyes and nose, set against a grey background.

Topped with mozzarella details, black sesame seeds, and a dill sprig, these cute bites are shaped like adorable bunny-stuffed ‘carrots’. This makes them particularly perfect for Easter and other fun occasions.

Serving Suggestion

Serve the mini peppers as a fun appetizer or snack, or top them onto a delicious spring salad.

Stuffed Mini Peppers Ingredients

  • Orange peppers: Make sure the peppers have a good shape that resembles a carrot and is easy to cut neatly.
  • Feta: I like to use a block of feta for the best results.
  • Greek yogurt: I prefer a 10% fat Greek yogurt, but use what you have.
  • Lemon juice: Adds a fresh, zesty tang.
  • Garlic: Adjust to taste, and omit if you prefer.
  • Sea salt: Balances all the flavors. You can add pepper too.

How to Make Stuffed Mini Peppers

  1. Make the whipped feta: Mix the feta, Greek yogurt, garlic, sea salt, and lemon juice in a mini food processor.
  2. Prepare the peppers: Cut out the top section of the peppers. De-seed the insides of the peppers.
  3. Fill the peppers: Spoon the whipped feta into the peppers.
  4. Final details: Shape the arms and ears out of fresh mozzarella using a cookie cutter. Top the details onto the bunnies. Add sesame seed eyes and nose, and a dill sprig.

Possible Variations

  • Orange peppers: Use any colored mini sweet peppers you can find.
  • Whipped feta: Feel free to add fresh herbs (basil or parsley would be delicious), crispy chopped bacon, green onions, garlic powder, onion powder, or even cayenne pepper.
  • Filling: Swap for creamy goat cheese, blue cheese, ricotta, a cream cheese mixture, ranch, buffalo chicken dip, etc.
  • Mozzarella: Or shape the bunny details with white cheddar.
  • Sesame seeds: Nigella seeds or chia seeds will also work.
  • Dill: Try parsley instead.

How to Store Leftovers

Keep them in an airtight container in the fridge, and enjoy them within 2 days.

FAQs

I have whipped feta leftover. What else can I serve it with?

Spoon any leftovers into a small bowl and enjoy with crackers, grissini, cucumber slices, radicchio, or crostini.

Can I make the bunnies ahead of time?

Sure. Prepare and fill the peppers with the whipped feta, but wait to cut out and top the mozzarella bunny details until an hour before serving.
