Prep Time: 95 min.

This Stuffed Baked Potato with tuna and cheddar cheese is the ultimate comfort food.

Serve the delicious recipe as a tasty side dish or on its own for dinner with your favorite vegetables.

Bake the potatoes for an hour, halve them, and scoop out the potato flesh.

Mix the flesh with tuna, butter, and cheddar cheese and fill it back into the potatoes. Top with more cheddar cheese, and then it's time to bake them again.

When the cheese is melted, golden, and bubbly your twice-baked potatoes are done. Sprinkle with chopped chives and serve.

You can swap tuna for bacon, chopped ham, broccoli, or more cheese. Add a spoonful of sour cream for an even creamier filling.
