These buttered, crispy Fried Egg crostini with spicy chili jam, topped with fresh mozzarella and juicy mango, are sure to be a hit with everyone. Perfect as an appetizer or snack, especially for Easter lunches.
Ingredients
- French Baguette (or similar)
- butter
- fresh mozzarella
- mango
- chili jam
- melon baller
Instructions
1. Slice the baguette and butter on both sides of each slice.
2. Set the oven on grill.
3. Place the buttered slices on a baking sheet and bake in the hot oven for 2-3 minutes until browned. Do keep an eye on them.
4. Allow to cool.
5. Slice the mozzarella in thin slices, approximately 5mm / 0.2 inches.
6. Cut the top skin off a mango parallel to the stone.
7. Use a small melon baller to cut into the mango flesh. You will get halved spheres of mango.
8. Spread some chili jam onto the cooled crostini.
9. Top with the sliced mozzarella and halved mango spheres.
10. Sprinkle with sea salt and enjoy.
Notes
If you don’t have chili jam, use regular pesto, smashed avocado, or omit.
