If you need an easy, no-fuss dinner with only a few ingredients, try this creamy Baked Burrata Pasta. It's the perfect meal for two, or double the quantities for a delicious family dinner everyone will love.

To make this tomato burrata pasta recipe, you simply roast cherry tomatoes and burrata together in the oven until bursting and golden. Remove from the oven, add fresh garlic, basil, and pasta.

Top with fresh burrata, sea salt, and basil. You can sprinkle with  balsamic glaze, roasted pine nuts, red pepper flakes, or even garlic and butter toasted breadcrumbs.

TIP: I’ve made this dish with two types of burrata, one being the creamier kind and the other a firmer burrata closely resembling a mozzarella, and the results are best with the creamier kind.

Serves 2.

1. Preheat the oven to 205°C (400°F).

2. Place the cherry tomatoes and burrata in an ovenproof dish. Drizzle olive oil on top. Sprinkle with sea salt and pepper to taste.

3. Bake in the hot oven for about 35 minutes or until the tomatoes burst and the burrata is golden.

4. Cook the pasta according to the package instructions. You want it 'al dente'. Hold on to about 50 ml of pasta water.

5. Remove the baked tomatoes and burrata from the oven.

6. Add garlic, basil, and the cooked pasta and mix everything. Add sea salt and pepper if needed as well as a splash of pasta water if you want the dish to be more creamy. 

7. Spoon the baked burrata pasta dish into two bowls.

8. Halve a fresh burrata and top half onto each bowl.

9. Sprinkle the burrata with sea salt.

10. Top with more fresh basil and serve.
