These Christmas tree rolls are my go-to for the holiday season, and they make a showstopping centerpiece. Made with fluffy pizza dough, savory sausage, and crisp peppers, every bite is incredibly satisfying. Even better, the rolls come together with minimal prep and are ready to eat in under an hour.

  • Pizza dough: I use store-bought, but you can use homemade, too.
  • Sausages: I prefer pre-cooked Frankfurter sausages. Choose any sausages you like. Be sure to bake them long enough to cook through.
  • Egg: For the egg wash.
  • To garnish: Fresh basil, rosemary, and yellow pepper.

Recipe Tip

Sprinkle sesame seeds onto the rolls after the egg wash for texture and crunch (optional).

How to Make Christmas Tree Rolls

  1. Divide dough: Preheat your oven to 200°C / 392°F. Spread out the pizza dough and cut it into 16 symmetrical rectangles.
  2. Prepare the rolls: Trim the sausages into smaller pieces and roll each piece into the pizza dough sections.
  3. Arrange the rolls in a tree shape standing up on a prepared baking sheet, brush with egg wash, and bake for 15-18 minutes, until golden all over.
  4. Transfer the tree to a serving platter. Garnish with fresh basil, yellow pepper stars, and fresh rosemary sprigs.

Recipe Tip

Lay the rolls flat in a tree shape if you prefer a more all-over golden exterior.

  • Pizza dough: Swap for store-bought puff pastry, shortcrust, or crescent roll dough.
  • Sausage: Use other fillings such as cheese, ham, Parmesan, chorizo, pepperoni, ricotta, Brie, jam, bacon, etc.
  • Egg: Or melted butter.
  • Add a condiment: Try mustard, ketchup, sriracha, chutney, hot honey, or a dollop of marinara sauce.
  • Top the rolls with parsley garlic butter or pesto.
  • Presentation: Arrange the rolls in a wreath shape instead.

Ingredients 

  • 280 grams pizza dough, 1 roll
  • 4 sausages, (frankfurter)
  • 1 egg
  • 6 fresh basil, leaves
  • 1 yellow pepper
  • 10 rosemary, sprigs (to garnish)

Instructions 

  • Preheat your oven to 200°C / 392°F.
  • Spread out the rectangular pizza dough.
  • Halve the dough lengthwise, and then cut it into 16 symmetrical rectangles.
  • Slice the sausages into pieces that are as wide as the rectangles.
  • Roll the sausage pieces into the strips of pizza dough.
  • Line a large baking sheet with parchment paper.
  • Arrange the snowmen standing up on the tray in a Christmas tree shape.
  • Brush with a beaten egg.
  • Bake for 15-18 minutes until golden.
  • Allow to cool.
  • Scatter basil leaves onto the tree.
  • Cut out the top yellow pepper star with a medium star cookie cutter.
  • Insert a toothpick into the star and stick it into the top of the tree.
  • Cut out small stars with the mini cutter and top these onto the basil leaves.
  • Garnish the tree with rosemary sprigs.
  • Serve with mustard or ketchup.
