Quick to prepare, it’s a refreshing snack or appetizer perfect for after-school, pool parties, and gatherings. 

This vegetable platter is one of my favorite ways to use raw vegetables and is easy to customize with celery, broccoli, snap peas, cauliflower, or any veggies you have on hand. With cute candy eyes and the best vegetable dip, it’s one healthy option even the pickiest eaters enjoy. 

Serving Suggestion

The carrot-shaped veggies are great for lunchboxes or top them onto salads for a bit of fun!

I often set out a platter for my kids to munch on in the afternoon, but I’ve also paired this veggie tray dip with other crowd favorites like my summer fruit plattertomato caprese salad, and ham and cheese pinwheels for a delicious picnic or easy backyard barbecue. No matter when you serve it, you really can’t go wrong! 

Ingredients for a Veggie Tray Dip

  • Veggies: Carrots and cucumbers (English or Persian cucumbers are best).
  • Sour cream: The base of the dip. I use full fat, but use what you prefer.
  • Spices: You’ll need garlic powder, onion powder, dill powder, and sea salt.

How to Make a Veggie Dip Tray

  1. Slice the cucumber and carrot.
  2. Cut out the shapes with the carrot cookie cutter.
  3. Use cucumber peel for the leafy tops. Insert them with a toothpick.
  4. Mix the ingredients for the dip.
  5. Assemble the veggie platter.
  6. Top with candy eyes.

Possible Variations

  • Veggies: Swap for other veggies such as radishes, beetroot, and peppers that can be shaped like carrots. Or choose your favorite vegetables such as cherry tomatoes, bell peppers, cauliflower florets, and other raw veggies.
  • Sour cream: Greek yogurt or creme fraiche.
  • Dill powder: Add fresh dill or chopped parsley.
  • Garlic powder: Swap for fresh garlic.
  • Onion powder: Finely chopped chives or shallot.
  • Candy eyes: Use cream cheese or hard cheese (like cheddar or mozzarella) and top with chia or sesame seeds.
  • Dip: Try guacamole, hummus, caramelized onion dip, or ranch dip.

How to Store Leftovers?

Keep everything covered with plastic wrap and stored in the fridge. Enjoy it within 2 days.

FAQs

I don’t have a carrot cookie cutter. Can I still make this?

You can shape the carrots by hand. In that case, I would cut out ‘a master’ carrot, and then shape the other veggies after that one. Alternatively, use any fun cookie cutters or just cut the veg into batons or sticks.

Can I make the platter in advance?

Yes. That’s absolutely fine. The veggies, however, are best on the same day.

Ingredients 

Veggies

  • 6 carrots
  • 1 cucumber
  • 18 candy eyes, mini

Dip

  • 250 ml sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill powder
  • 1 teaspoon onion powder
  • sea salt , to taste

Instructions 

Vegetables

  • Cut carrots and cucumber into slices.
  • Use the carrot cutter to make the veg cutouts (you can cut by hand, too).
  • Use cucumber peel for the leafy tops.
  • Make a hole to insert these with a toothpick.
  • Arrange the veggies on a platter.
  • Top with candy eyes.

Dip

  • Mix all the ingredients and add salt to taste.
  • Spoon the dip into a bowl and place on the platter.
