  • Flour, butter, sea salt, maple syrup, cold water: Used for the pie crust. Make sure the butter is cold (salted or unsalted).
  • Onions: I mix yellow and red onions.
  • Butter: To caramelize the onions and bring out their sweet flavor.
  • Heavy cream: Gives the golden onions a velvety, creamy texture.
  • Greek yogurt: I use 10%, but any plain yogurt is fine.
  • Eggs: Medium or large.
  • Mozzarella and Parmesan: Combine for a nutty and cheesy consistency.
  • Seasoning: Thyme, sea salt, and pepper balance all the savory ingredients.

How to Make a Caramelized Onion Quiche

  1. Prepare and bake the pie crust: Mix flour, butter, water, sea salt, and maple syrup. Roll it out and bake at 175°C / 347°F (fan).
  2. Caramelize the onions: Add butter to a large pan, then add the diced onions. Brown on medium-high heat for 5-10 minutes, then turn down the heat and caramelize slowly until golden. Add heavy cream on a burst of high heat and let the onion mixture cool.
  3. Make the pie filling: Mix eggs, yogurt, caramelized onions, cheese, and seasonings. Top with more cheese.
  4. Bake for 25-27 minutes until golden and baked through.

Possible Variations

  • Onions: Use shallots or white onions. You can even add garlic.
  • Greek yogurt: Swap it for crème fraîche, sour cream, or skyr.

Pie crust

  • 175 grams plain flour
  • 100 grams butter, cold, cubed
  • 1 teaspoon sea salt
  • 1 teaspoon maple syrup
  • 2 tablespoons water, cold

Caramelized onion

  • 7 onions, white and red
  • 40 grams butter, salted
  • 60 ml heavy cream

Filling

  • 4 eggs
  • 140 grams Greek yogurt
  • 50 grams mozzarella, shredded
  • 50 grams Parmesan
  • 2 teaspoons sea salt
  • pepper, to taste
  • 1/2 teaspoon thyme

Instructions 

Pie crust

  • Preheat the oven to 175°C (347℉).
  • Measure the flour into a large mixing bowl.
  • Crumble the cubed butter into the flour.
  • Add the salt, syrup, and water.
  • Knead the dough into a smooth ball.
  • Roll the dough out on a floured, clean surface into a 14-inch circle.
  • Grease the pie dish with butter.
  • Transfer the dough to the pie dish, flattening it against the bottom of the dish and up along the edges.
  • Tuck in the dough along the edge of the dish so nothing hangs over.
  • Use a fork to poke small holes into the bottom of the crust to prevent bubbling.
  • Bake for 10 minutes and allow to cool.
  • Trim along the edge of the pie with a knife to remove any excess.

Caramelized Onion

  • Melt the butter in a medium-sized frying pan on medium-high heat.
  • Add the chopped onions and brown for 5-10 minutes. Be sure to stir consistently to prevent burning.
  • Turn down the heat to medium-low, and continue to brown for 20-25 minutes until the onions are soft and golden brown.
  • Pour the heavy cream into the caramelized onions, bring to a quick boil, and turn off the heat.
  • Season with sea salt and pepper and allow to cool.

Pie

  • Whisk together the caramelized onion, eggs, mozzarella, half the Parmesan, thyme, sea salt, and pepper in a medium-sized bowl.
  • Pour the egg mixture into the baked pie crust and top with the remaining Parmesan.
  • Bake for 25-27 minutes, until golden and baked through.
