  • Sausages: Use mini sausages, little smokies, cocktail sausages, or cut a regular sausage in thirds.
  • Bacon: I use unsmoked bacon, but smoked is delicious, too. 
  • Maple syrup: Maple syrup helps to bind the coconut sugar for the best caramelized topping.
  • Coconut sugar: Or brown sugar.

How to Make Bacon Wrapped Sausages

  1. Prepare: Halve the bacon slices and wrap one half around each sausage.
  2. Skewer the sausages: Add 5-6 sausages to each skewer. 
  3. Final touches: Brush the sausages with maple syrup and sprinkle coconut sugar on top. 
  4. Bake. Serve: Bake for 20 minutes until golden. Arrange on a serving platter. Garnish with chives.

Tips and Tricks

  • Rest one end of the skewer on the edge of the baking dish when roasting or place the skewers on top of a rack for the crispiest results.
  • Don’t skip the coconut sugar. The caramelized topping is everything!
  • Optional: Rest the baked sausages on a piece of paper towel to drain any excess bacon fat before serving.

Ingredients 

Bacon sausages

  • 200 grams sausages, mini
  • 200 grams bacon
  • 2 tablespoons maple syrup
  • 15 grams coconut sugar, or brown sugar
  • 1 teaspoon fresh chives, chopped

Dip

  • 2 tablespoons ketchup
  • 2 tablespoons mayonnaise

Instructions 

  • Halve the bacon slices lengthwise.
  • Wrap each sausage with the bacon halves.
  • Slide 4-5 wrapped sausages onto a skewer.
  • Place the filled skewers in a baking dish with one side resting on top of the dish, if possible.
  • Brush the sausages with maple syrup.
  • Sprinkle coconut sugar on top (about 1/2 teaspoon on each sausage).
  • Bake for 20-22 minutes until golden and crispy.
  • Arrange on a serving dish with your favorite dip.
  • Garnish with chopped chives.
