To prepare it, mix two types of cream cheese with Parmesan, add a few other tasty ingredients, and in no time, you’ll have the base of your cheese ball, ready to be heart-shaped.

  • Cream cheese: I use one plain and one herb-flavored.
  • Parmesan: Adds flavor and texture to the cheese ball, while making it easier to shape.
  • Onion powder: For onion flavor. You can omit.
  • Worcestershire sauce: Adds savory umami.
  • Fresh parsley: Bright, peppery taste.
  • Pomegranate: The seeds create the most beautiful jewel-like cheese ball, and balances the savory cheese. 
  • Cucumber: An English or Persian cucumber pairs well with the cheese. Use it to shape the striking letters and outline the cheese ball.

How to Make a Valentine’s Day Cheese Board

  1. Make the cheese ball and prepare the ingredients: Mix the cream cheeses, grated Parmesan, Worcestershire sauce, garlic powder, and chopped parsley. Deseed the pomegranate, slice the cucumber, and cut out the letters ‘Be Mine’.
  2. Shape the cheese: Wrap the cheese in plastic wrap and shape it into a heart. Place it in the fridge for at least 30 minutes.
  3. Arrange the cheese: Place the cheese heart on your serving platter and top with pomegranate seeds. Outline the heart with cucumber slices.
  4. Final touches: Place the cucumber letters on top of the heart and baguette pieces along the outer rim of the platter. Serve.

Note

You may want to season the cheese ball. I don’t, but do taste it before shaping to see if it might benefit from adding sea salt and pepper.

Possible Variations

  • Parmesan: Add any hard cheese you like. Try cheddar, gruyere, manchego, etc, even blue cheese will work.
  • Cream cheese: You can keep it plain, use only herby cream cheese, or opt for another flavor.
  • Pomegranate: Swap for chopped dried cranberries or freeze-dried raspberries or strawberries (to keep it red).
  • Add ins: Try fresh herbs, chopped bacon, caramelized onion, or sundried tomatoes.
  • Baguette: Crackers, veg, slices of focaccia, breadsticks, etc.

Cover the cheese with plastic wrap and store it in the fridge.

What do I do if I don’t have alphabet cookie cutters?

You don’t need to write ‘Be Mine’. The heart shape will still get the message across.

It’s not Valentine’s Day, but I really want to make this. How do I serve it without the heart-theme?

Not a problem! Simply omit the Be Mine letters, shape the cheese ball into a dome, and then top with pomegranate seeds.

  • 50 grams Parmesan, finely shredded
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder

Instructions

  • Wrap the film around the cheese ball, keeping the sides open.
  • Shape the cheese into a heart.
  • Place the heart in the fridge for at least 30 minutes.
  • Carefully tip the heart onto your serving platter.
  • Top with pomegranate seeds. Start by framing the outline to keep the other seeds in place.
  • Slice the cucumber.
  • Arrange cucumber slices around the cheese ball.
  • Cutout the words BE MINE with the alphabet cutters and place the words on top of the heart.
  • Serve with baguette slices, crackers, veggies, or breadsticks.
