These adorable Watermelon Popsicles with Chocolate are a simple and fun treat for hot summer days. They are so easy to make and you only need a few simple ingredients.
Keep them in the freezer for a refreshing dessert, or enjoy them as they are. For a fun twist, cut off the corner of the popsicles to make it look like they've already had a bite taken out of them.
You can vary this watermelon popsicle recipe in many ways. Try it with or without chocolate or candy eyes. You can even use other types of melon, dragonfruit, or mango. If you are short on time, skip the chocolate and simply squeeze some lime juice on top.
Ingredients
- 4 slices watermelon
- 100 grams dark chocolate (3.5 oz)
- 14 candy eyes
- 7 popsicle sticks
- small round cookie cutter
- parchment paper
Instructions
Makes 7.
1. Slice the watermelon.
2. Cut a slice into a rectangular popsicle shape. Use this 'master' popsicle to make the others.
3. Trim a bite mark at one corner with the small round cutter (or use a small glass). You can also leave some plain.
4. Dry the melon popsicles off on a paper towel and insert the popsicle sticks.
5. Melt the dark chocolate.
6. Place the dark chocolate in a small bowl.
7. Dip the tip of the watermelon into the chocolate.
8. Top with candy eyes.
9. Allow to set on parchment paper.
10. Serve.
