The Christmas Wreath Salad is colorful and festive and great to enjoy with friends and family.
Serve it as a delicious appetizer with a fresh baguette or make it a fun side salad at your next holiday party.
Ingredients
- 5 fresh mozzarella
- 500 grams cherry tomatoes
- 1 black olive
- 6 peppercorn
- fresh basil leaves
- olive oil
- balsamic glaze
- sea salt
- pepper
Instructions
Serves 8-10 people.
1. Halve the fresh mozzarella. You may need to trim the halves so they are round.
2. Arrange the cheese the round side up on a platter.
3. Scatter the cherry tomatoes around the cheese. You can halve some of the tomatoes to make it easier to fill the space.
4. Quarter an olive and trim the inside of the flesh off.
5. Use a sharp knife to cut the olive skin into v-shapes for the snowball eyes and the curved smiles.
6. Top the olive eyes and mouth onto the mozzarella. I also used peppercorns for eyes on two of the snowballs (to save time, just use peppercorn for the eyes and mouth).
7. Fill basil leaves in all the gaps.
8. Drizzle with balsamic glaze, olive oil, sea salt and pepper.
9. Serve.
Notes
I used 5 mozzarella halves for this wreath, but do use all 6 so there is no wastage.
