Christmas Wreath Salad
Cherry tomato and fresh mozzarella wreath topped with fun expressions and fresh basil.

- 3 fresh mozzarella balls
- 500 grams cherry tomatoes
- 1 olive black
- 6 peppercorn
- fresh basil leaves
- 5 tablespoons olive oil
- 4 tablespoons balsamic glaze
- sea salt to taste
- pepper to taste
Halve the fresh mozzarella. You may need to trim the halves so they are round.
Arrange the cheese the round side up on a platter.
Scatter the cherry tomatoes around the cheese. You can halve some of the tomatoes to make it easier to fill the space.
Quarter an olive and trim the inside of the flesh off.
Use a sharp knife to cut the olive skin into v-shapes for the snowball eyes and the curved smiles.
Top the olive eyes and mouth onto the mozzarella. I also used peppercorns for eyes on two of the snowballs (to save time, just use peppercorn for the eyes and mouth).
Fill basil leaves in all the gaps.
Drizzle with balsamic glaze, olive oil, sea salt and pepper.
Serve.
