This cute Pumpkin Veggie Tray, made with carrots, cucumber, mozzarella, and hummus, is fun, delicious, and definitely not scary!

To make it, place two small bowls of hummus on a platter for the eyes. Arrange carrot slices around the bowls and then decorate with cucumber slices, cucumber peel, and mozzarella to make your pumpkin.

If you want a scary pumpkin, slice a piece of mozzarella for the mouth and fill it with sharp cucumber teeth.

This platter is also great for Thanksgiving, with its cozy fall vibes to fit any occasion.

Recipe Tip

I used avocado peel for the eyes, but cucumber peel would work better. That way, you can eat everything.

Ingredients 

  • 6 carrots
  • 200 grams hummus
  • 1 cucumber
  • 1 fresh mozzarella

Instructions 

  • Peel the carrots.
  • Chop them into discs.
  • Place two small bowls of hummus for eyes on a platter.
  • Use the round cutter to make cucumber peel eyes. Top with a bit of mozzarella for the highlights.
  • Arrange the carrot discs around the bowls and make a slight indent between the eyes so it resembles a pumpkin.
  • Place some cucumber slices for the stem.
  • Make the mouth using a long strip of mozzarella or cucumber peel.
  • Serve.
