Honey Roasted Potatoes Ingredients

  • Potatoes: I used large baking potatoes for this recipe and cut them into small 1-inch (2.5 cm) chunks.  Any yellow potato variety will work well.
  • Butter: Salted butter is my go-to here. 
  • Honey: A runny honey or maple syrup is perfect. 
  • Seasoning: I use sea salt and pepper to round off the flavors. Adjust to your liking.

How to Make Honey Roasted Potatoes

  1. Prepare the ingredients. Wash and dice the potatoes. Soak them in cold water, and dry them completely.
  2. Coat the potatoes with melted butter, honey, and seasoning.
  3. Bake on a lined baking sheet for 40-45 minutes until golden.

Tips and Tricks

  • Cut the potatoes into the same size to ensure a similar cook time.
  • If you are in a rush, skip the soak and give the diced potatoes a quick double rinse. 
  • Dry the potatoes thoroughly. This helps to give them a crisp exterior.
  • Spread out the potatoes when roasting so they don’t overlap. 

Possible Variations

  • Honey: Use any honey you like. If yours is the thicker kind, heat it with the butter for a runny consistency. Swap for maple syrup or hot honey.
  • Butter: Unsalted butter, ghee, or olive oil are all good options.
  • Potatoes: If you can’t find baking potatoes, use baby potatoes or sweet potatoes. Even parsnips and carrots would be a tasty alternative.
  • Seasoning: Add any dried (or fresh) spices you like, such as a sprinkle of garlic powder, onion powder, cayenne, chili flakes, rosemary, oregano, or even cinnamon.

Can I make the roasted potatoes ahead of time?

Yes, you can. One thing I like to do is wash and dice the potatoes, then leave them to soak for a few hours, until I’m ready to coat them and bake them.

Why do I need to soak the potatoes?

Soaking helps remove the surface starch, making them extra sticky and crisp.

Can I reheat the potatoes?

Absolutely, put them in the oven at 190 °C (375°F) until warm, and then turn on the grill setting for a few minutes. 

What can I serve with the potatoes?

They are the perfect side for most meals. We love them with a juicy steak, salmon, or meatballs.

Ingredients 

  • 1 kg potatoes
  • 50 grams butter, salted
  • 50 grams honey
  • sea salt, to taste
  • pepper, to taste

Instructions 

  • Preheat your oven to 190℃ (350℉).
  • Wash and dice the potatoes into similar-sized chunks.
  • Soak in cold water for 15 minutes-30 minutes.
  • Dry the potatoes thoroughly using a paper towel.
  • Melt the butter.
  • Top the potatoes with the melted butter and honey.
  • Add sea salt and pepper to taste.
  • Mix well until all the potatoes are covered with the melted butter mixture.
  • Arrange the potatoes on a lined baking sheet. Spread them out so they do not overlap.
  • Bake the potatoes for 40-45 minutes. Check on them every 15 minutes and shuffle them if necessary to prevent burning.
  • Serve.

For extra crispy potatoes, grill them for a few minutes, but keep a close eye so they don’t burn.
