I started making charcuterie boards and grazing platters like my Santa charcuterie board and Christmas grazing platter as a fun idea and a way to bring a little more nutrition into holiday gatherings. However, they’ve been such a hit that I now make them for every occasion.

With Easter right around the corner, I jumped at the chance to try out an Easter themed charcuterie board, and everyone loved it!

I like to put the board out for a light lunch that my kids will enjoy, but it’s also sure to impress your guests at parties and family gatherings.

Easter Charcuterie Board Ingredients

  • Cheese: I include red cheddar, white cheddar, round Brie, and Babybel (or a small round cheese for the tail).
  • Meat: I typically use salami and chorizo for a savory, spicy taste.
  • Fresh produce: Blackberries, blueberries, cherry tomatoes, cucumbers, mini lemons, and mini bell peppers add color and crunch and make for great dippers.
  • Extras: Honey (with walnuts), almonds, and crackers add extra flavor and crunch. You can use any plain or flavored nuts and crackers you like best. 

How to Make a Savory Easter Bunny Charcuterie Board

  1. Arrange the Brie at the base of your chopping or charcuterie board, letting about a third extend outside the edge.
  2. Cut the cheese along the edge of the board, creating a curved piece. Use this to shape bunny ears. Then, place them on top of the Brie wheel.
  3. Spoon the walnut honey into a small bowl.
  4. Roll the salami and stack the pieces on top of each other.
  5. Next, layer the ingredients around the bunny.
  6. Add the Babybel tail on top of the Brie cheese wheel, and enjoy!

Tips for Success

  • Always start by making the bunny! This serves as the base of the tray, making it look both cute and organized.
  • Spoon dips and spreads into small bowls.
  • Use a crinkle cutter to slice the cucumber for extra dimension and a little more fun.
  • Alternate ingredients, placing different colors and textures side by side.
  • Keep all the ingredients cold before assembling and serving.

Possible Variations

  • Mix and match the ingredients you have on hand. Include extra produce such as grapes, strawberries, orange slices, and kiwis, as well as vegetables like broccoli, cauliflower, and carrots.
  • Add to or replace the cheese with options like goat cheese, Boursin, or other soft cheeses.
  • Mix and match cured meats such as prosciutto, capicola, or pepperoni and pair them with pickles, olives, and other condiments.  
  • Then add even more flavor and interest with additions like pretzels, chips, phyllo feta friesfocaccia garlic bread, hummus, or tzatziki.
  • And don’t forget to include your favorite Easter candy, such as jelly beans, Peeps, chocolate bunnies, and other sweet treats. The options are truly endless!

Can I make an Easter charcuterie board ahead of time?

This board is best served right away. However, if needed, you can assemble all the ingredients and cover the board tightly with plastic wrap. Store it in the fridge for up to one day.

How can I cater to different allergy needs when making a charcuterie board?

You can easily omit any allergen-containing ingredients, such as nuts, gluten, or cheese. Another option is to create different sections of the board and label them dairy-free, nut-free, etc, or make a few smaller boards or baskets to meet various needs.

Ingredients 

  • 50 grams cheddar, red
  • 75 grams cheddar, white
  • 250 grams Brie, round
  • 13 slices salami
  • 10 slices chorizo, spicy salami
  • 5 cherry tomatoes
  • 1 Babybel, or similar
  • 3 blackberries
  • 14 blueberries
  • 2 tablespoons honey, walnut or regular
  • 8 slices cucumber, peeled
  • 2 mini lemons, or regular, sliced
  • 12 almonds
  • 1 mini yellow pepper, sliced, deseeded
  • 100 grams crackers

Instructions 

  • Place the Brie at the base of your chopping board so a third extends outside the edge.
  • Cut the cheese along the edge of the board, holding your knife vertically to ensure the cheese will line up perfectly.
  • Shape the ears from the bottom part of the cheese (see video).
  • Place the ears on top of the Brie.
  • Cut the two cheddar cheeses into small cubes.
  • Spoon the honey into a small bowl.
  • Peel and chop the cucumber with a crinkle cutter.
  • Halve a salami slice, then fold in the two sides so one side overlaps the other symmetrically. Continue with the other slices and stack them.
  • Arrange the stacked salami around the brie bunny, then top with the cherry tomatoes, spicy salami, red cheddar cubes, sliced yellow pepper, white cheddar cubes, halved mini lemons, crackers, almonds, honey, blackberries, and blueberries.
  • Add the Babybel tail.
  • Serve.
