Christmas Wreath Salad
Ingredients
- 3 fresh mozzarella, balls
- 500 grams cherry tomatoes
- 1 olive, black
- 6 peppercorn
- fresh basil leaves
- 5 tablespoons olive oil
- 4 tablespoons balsamic glaze
- sea salt, to taste
- pepper, to taste
Instructions
- Halve the fresh mozzarella. You may need to trim the halves so they are round.
- Arrange the cheese the round side up on a platter.
- Scatter the cherry tomatoes around the cheese. You can halve some of the tomatoes to make it easier to fill the space.
- Quarter an olive and trim the inside of the flesh off.
- Use a sharp knife to cut the olive skin into v-shapes for the snowball eyes and the curved smiles.
- Top the olive eyes and mouth onto the mozzarella. I also used peppercorns for eyes on two of the snowballs (to save time, just use peppercorn for the eyes and mouth).
- Fill basil leaves in all the gaps.
- Drizzle with balsamic glaze, olive oil, sea salt and pepper.
- Serve.
