Recipe Tip

I used 5 mozzarella halves for this wreath, but do use all 6 so there is no wastage.

Ingredients 

  • 3 fresh mozzarella, balls
  • 500 grams cherry tomatoes
  • 1 olive, black
  • 6 peppercorn
  • fresh basil leaves
  • 5 tablespoons olive oil
  • 4 tablespoons balsamic glaze
  • sea salt, to taste
  • pepper, to taste

Instructions 

  • Halve the fresh mozzarella. You may need to trim the halves so they are round.
  • Arrange the cheese the round side up on a platter.
  • Scatter the cherry tomatoes around the cheese. You can halve some of the tomatoes to make it easier to fill the space.
  • Quarter an olive and trim the inside of the flesh off.
  • Use a sharp knife to cut the olive skin into v-shapes for the snowball eyes and the curved smiles.
  • Top the olive eyes and mouth onto the mozzarella. I also used peppercorns for eyes on two of the snowballs (to save time, just use peppercorn for the eyes and mouth).
  • Fill basil leaves in all the gaps.
  • Drizzle with balsamic glaze, olive oil, sea salt and pepper.
  • Serve.
