If you need an easy recipe for your next spring gathering, try these adorable Stuffed Mini Peppers. They are made to look like bunny-stuffed ‘carrots’, which makes them perfect for Easter and other fun occasions.
Most stuffed peppers have a herby cream cheese filling, but these are filled with creamy whipped feta, which complements the sweetness of the crunchy peppers. Serve the mini peppers as a fun appetizer or snack, or top them onto a delicious spring salad.
