This easy recipe only requires mozzarella balls, blueberries, grape and cherry tomatoes.

Arrange the delicious blueberry caprese skewers on a tray or chopping board. When you are ready to serve, drizzle with extra virgin olive oil and balsamic vinegar. You can even add fresh basil leaves for good measure.

Ingredients 

  • 11 grape tomatoes
  • 11 cherry tomatoes
  • 24 bocconcini, mozzarella balls
  • 20 blueberries
  • sea salt, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions 

  • Halve the grape tomatoes in the center at a slant.
  • Rotate one half so the tomato resembles a heart.
  • Assemble the sticks. First, the bocconcini, then the heart-shaped tomatoes, another bocconcini, and lastly, a cherry tomato.
  • Place the skewers on a serving tray, platter, or chopping board. You’ll need 7 skewers on the right side and 4 on the bottom left.
  • Fill the gap above the left skewers with 4 rows of blueberries.
  • Slice the bocconcini and use the star cutter to make the mozzarella stars.
  • Arrange the stars on top of the blueberries.
  • Sprinkle the skewers with sea salt, and drizzle with olive oil and balsamic vinegar.
  • Serve.
