Ingredients 

Lettuce boats

  • 1 lettuce, little gem
  • 100 grams feta
  • 1/2 red onion, small
  • 2 tablespoons pine nuts
  • 15 strawberries, large
  • 1/2 mango

Dressing

  • 5 tablespoons olive oil
  • 3 tablespoons white wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt
  • black pepper, to taste

Instructions 

  • Place the pine nuts in a medium-hot pan and roast them until golden on both sides.
  • Allow to cool.
  • Wash the lettuce leaves and dry the 'boats' with a paper towel.
  • Arrange the lettuce on a platter.
  • Cube the mango and strawberries.
  • Top with crumbled feta cheese, mango, strawberries, roasted pine nuts, and finely chopped red onion.
  • Mix the olive oil, Dijon mustard, white wine vinegar, honey, and sea salt to make the dressing.
  • Top the boats with the dressing.
  • To make the strawberry and mango flowers, slice a large strawberry lengthwise and cut out the flowers with the cutter.
  • Use a melon baller to cut out the mango to create the center of the flowers.
  • Arrange the flowers on the lettuce boats.
  • Serve.
