These delicious Easter Sausage Rolls, shaped like carrots, are so cute and sure to be a hit at your spring gatherings! And best of all, they are easy to make!

All you need is store-bought pizza dough and a few sausages. Top the rolls with a yolk and a smoked paprika eggwash to give them that orange tint.

Once they are out of the oven, garnish with parsley. Add candy eyes for the final touch. Your carrots are complete!

Easter Sausage Rolls Ingredients

  • Pizza dough: I use rectangular store-bought pizza dough, but you can make your own dough too.
  • Sausages: I like frankfurter (pork) sausages. You can use mini sausages or cut a regular sausage into thirds.
  • Smoked paprika and egg yolk: Combine and brush on top of the carrots for a naturally orange tint.
  • Garnish: Fresh parsley sprigs (or dill) and candy eyes (optional).

How to Make Easter Sausage Rolls

  1. Prepare the dough: Roll out the rectangular dough and trim it into 12 symmetrical strips.
  2. Assemble the sausage rolls: Top each strip of dough with a piece of sausage, then roll it into a carrot shape.
  3. Bake the sausage rolls: Place the rolls on a baking sheet. Brush with the egg-and-paprika wash. Bake for around 10 minutes until golden.
  4. Final touches: Once cool enough to handle, insert a parsley sprig into each roll and top with candy eyes.

Possible Variations

You can adapt this sausage roll recipe in many ways – fill them with any sausages you like or use ham and cheese, chocolate, or feta for tasty (even sweet) alternatives. Swap the pizza dough for puff pastry or crescent dough (check the packet instructions for any differences in bake time).

Best Way to Store Leftovers

Let the baked pastry carrots come to room temperature and store them in the fridge in an airtight glass container for 1-2 days. You can also freeze them for up to 3 months.

My pizza dough is round and not rectangular. What do I do?

Roll it out and shape it as a rectangle, as best you can. You will need long strips of dough for the best results.

Is there any alternative to paprika to get that orange teint?

Add chili powder, sriracha, sumac, cayenne, ground red pepper flakes, or smoked paprika.

Ingredients 

  • 1 pizza dough, roll, 280 grams
  • 4 sausages
  • 1 egg, yolk only
  • 1 teaspoon smoked paprika
  • sea salt, to taste
  • 24 candy eyes
  • 12 sprigs fresh parsley, to garnish

Instructions 

  • Turn on your oven to 200°C (400°F).
  • Roll out the pizza dough and cut it into 12 equal-sized strips.
  • Divide the sausages into thirds.
  • Roll the strips into each sausage. Start rolling underneath the sausage to get the pointy triangular shape. Continue until you get to the top of the sausage.
  • Pinch the dough at the top of the sausage roll closed tightly.
  • Mix the egg yolk with a pinch of smoked paprika (save the egg white for an omelet or egg-fried rice).
  • Brush the sausage rolls with the smoked paprika egg wash and sprinkle with sea salt.
  • Bake the rolls in the hot oven for about 10 minutes (you want them golden brown).
  • Allow to cool slightly.
  • Stick a toothpick into the top of the sausage rolls and insert a sprig of parsley.
  • Attach candy eyes (with edible glue or cream cheese) or omit.
  • Serve with yellow mustard or any dip you prefer.
