Easter Fruit Tray Ingredients

Fruit:

  • Watermelon: Choose a firm, heavy watermelon that sounds hollow when tapped and has a large field spot.
  • Kiwi: You’ll need one kiwi split into two halves to rest the bunny’s feet on and another kiwi for the bunny’s feet.
  • Strawberries: Look for firm, bright red, and unbruised berries.
  • Grapes: Use any grapes you like.
  • Mango: Opt for a firm mango with slight give.

Dip:

  • Lemon curd: I use storebought.
  • Mascarpone: Use a good quality for the best results (I like Galbani).
  • Heavy cream: Make sure it’s cold.
  • Maple syrup: The sweetness balances the tangy curd.

How to Make an Easter Fruit Tray

  1. Prepare the dip: Whip the mascarpone, add the cream, and whisk until soft peaks form. Fold in the lemon curd and maple syrup. Spoon the dip into a small bowl.
  2. Prepare the fruit: Cut three slices of watermelon and trim one slice into six symmetrical pieces. Shape the other two slices into the bunny’s feet. Halve the strawberries and grapes and cut out the mango balls. Peel the kiwis and cut off the sides. Cut one kiwi in half and slice the other.
  3. Assemble the bunny: Place the dip in the center of a chopping board. Arrange the watermelon feet on top of the kiwi halves. Top with the kiwi slices and grape halves to make the bunny’s foot details.
  4. Now for the fruit: Add the strawberry halves, watermelon slices, mango balls, and grapes.

Recipe Tip

There will be extra dip, so feel free to top up or use a larger bowl!

Possible Variations

  • Watermelon details: Swap for cantaloupe, yellow watermelon, honeydew, or dragonfruit. You can even shape the feet out of melted chocolate.
  • Dip: Feel free to add more lemon curd, lemon juice, or finely grated lemon zest for more citrusy flavor. Or swap for any sweet dip, melted chocolate, or whipped cream.
  • Fruit: Use any fruit you like: raspberries, blueberries, oranges, melon, apple, pear, etc.
  • Toothpicks: You can serve the fruit plate with toothpicks or skewers to make it easier to eat mess-free.

How to Store Leftovers

Store leftover fruit and dip in separate containers in the fridge and enjoy it within 1-2 days. You can also freeze it and add to your next smoothie (use within 3 months).

Equipment

Ingredients 

Fruit

  • ½ watermelon
  • 1 mango
  • 300 grams grapes, green
  • 2 kiwis
  • 500 grams strawberries

Dip

  • 125 grams mascarpone
  • 250 grams heavy cream
  • 100 grams lemon curd
  • 1 tablespoon maple syrup

Instructions 

Dip

  • Whip the mascarpone for 60 seconds in a medium-sized bowl (I use a handmixer).
  • Add the cream and whip until soft peaks form.
  • Pour in the maple syrup and lemon curd and mix until just incorporated.
  • Spoon the dip into a bowl.

Fruit

  • Cut three slices of watermelon.
  • Shape two of the slices into the bunny's feet. I cut the feet by hand, and use the first one as a guide to shape the next.
  • Peel the kiwis and cut off both ends.
  • Halve one kiwi and slice the other.
  • Now, halve the strawberries and three of the grapes.
  • Slice the mango to each side of the pit.
  • Use the melon baller to cut out the mango balls (or cube the mango).

Assembly

  • Place the dip in the center of the platter.
  • Arrange the kiwi halves and the watermelon feet underneath the dip.
  • Top each foot with a kiwi slice and the three grape halves.
  • Add the remaining fruit. There's no right or wrong way here.
  • Serve.
