This easy recipe with crispy paprika rice cakes, creamy goat cheese, fig jam, and salty olives comes together in about 15 minutes. You can even make them beforehand, cover them, and store them in the fridge until they are ready to go.

Feel free to replace the rice cakes with any round crackers you like (or you can use cucumber slices, too). Onion chutney, olive tapenade, or cream cheese would also be tasty spread options, and you can even swap goat cheese for mozzarella.

Equipment

Ingredients 

  • 12 rice cakes, mini
  • 2 tablespoons fig jam
  • 180 grams goat cheese , 1 log
  • 10 kalamata olives, pitted
  • 1 slice cheddar
  • 24 chia seeds

Instructions 

  • Slice the goat’s cheese.
  • Spread fig jam onto each rice cake (not featured in the how to video).
  • Top with the goat cheese slices.
  • Halve a kalamata olive.
  • Place one half of the olive on the goat cheese to make the lamb’s face.
  • Using the other half, cut a straight line at one of the rounded corners for the perfect half-circle ear shape. Repeat for the other ear.
  • Add the lamb’s ears.
  • Cut out round eyes using cheddar and a metal straw.
  • Place the eyes onto the lamb.
  • Top with chia seeds for pupils.
  • Serve.
