Slice the goat's cheese.
Spread either fig jam, onion chutney, or olive tapenade onto each mini rice cake.
Top with the goat cheese slices.
Halve a kalamata olive.
Place one half of the olive on the goat cheese to make the lamb's face.
Using the other half, cut a straight line at one of the rounded corners for the perfect half-circle ear shape. Repeat for the other ear.
Add the lamb's ears.
Cut out round eyes using cheddar and a metal straw.
Place the eyes onto the lamb.
Top with chia seeds for pupils.
Serve.
